SAINT PAUL – As America’s appetite for craft spirits continues to grow, start-up distillers Shelly Dailey and Brad Rolfs, co-owners of Studio Distilling of St. Paul, are entering an exciting and competitive market. They began producing delicious whiskeys with a true grain-to-glass process in September of 2017. Shelly and Brad prioritized energy efficiency because it is good for the environment and the bottom line. They chose Variable Frequency Drives (VFD) to better control power demand during distilling, such as when stirring the mash and transferring whiskey to different vessels.
Energy Smart was able to facilitate a retroactive Xcel Energy rebate of $400 for the VFDs, which will provide an estimated annual electric cost savings of $196. Shelly Dailey says, “We are a brand new company and literally every dollar counts.” The whiskey is expected to be ready for tastings and tours in early summer of 2018.
